Banana Cake With Butterscotch Sauce
- 4 None large ripe bananas, 2 thinly sliced diagonally, 2 mashed
- 1 cup brown sugar
- 9 tbsp butter, softened
- 2 None large eggs
- 1 1/4 cups self-rising flour, sifted
- 2/3 cup buttermilk
- None None ice-cream, to serve
- None None Butterscotch Sauce
- 2 1/2 tbsp butter
- 1 1/2 cups heavy cream
- 1/2 cup sugar
- Preheat oven to 350u0b0F. Lightly grease and line an 8-inch round cake pan. Sprinkle pan base with 1/2 cup brown sugar. Arrange sliced bananas on top.
- For the batter, cream butter and remaining brown sugar together using an electric mixer. Fold in flour, mashed bananas and buttermilk. Spoon mixture evenly into pan. Bake 55-60 mins.
- Meanwhile, for the butterscotch sauce, melt butter in small saucepan on medium. Add cream and sugar, stirring to dissolve. Bring to a boil, stirring. Reduce heat and simmer 1-2 mins. Drizzle on warm cake and serve with ice-cream.
