Individual Strawberry Tarts
- 2 None sheets frozen pie dough, thawed
- 1 cup cream cheese, chopped
- 1/2 cup sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/4 cup heavy cream, whipped until soft peaks form
- 2 pints strawberries, hulled and halved
- 1/4 cup strawberry jam
- 1 tbsp brandy
- Preheat oven to 400u0b0F. Cut each pastry sheet into 4 pieces. Ease into 3 inch individual tart pans, trimming edges.
- Line dough with parchment paper and fill with baking weights, dried beans or rice. Blind bake for 10 minutes. Remove paper and weights and return to oven for 3 minutes. Cool. Reduce oven temperature to 350u0b0F.
- Using an electric mixer, beat cream cheese and sugar together in a bowl until creamy. Beat in the egg and vanilla extract. Fold in the whipped cream.
- Divide filling among the tarts. Bake for 15-20 minutes, until firm. Cool.
- Arrange strawberry halves on top of filling. Warm strawberry jam and brandy in a small saucepan. Brush over strawberries to glaze, then transfer to a serving plate. Serve.
