Apricot And Almond Cake

  1. Preheat oven to 325u0b0F. Grease a 9 inch cake pan and line base and sides with greased parchment paper.
  2. Beat butter, sugar, eggs, flour and baking powder together until pale and creamy. Fold in apricots. Transfer to prepared pan, smooth surface and bake for about 1 hour 15 mins, until golden and a skewer inserted in the center comes out clean. Let cool in pan for 5 mins then turn out onto a wire rack to cool completely.
  3. Meanwhile, to make the frosting, beat cream cheese and powdered sugar together until smooth. Spread over top of cake and decorate with almonds and raspberries. Lightly dust with powdered sugar to serve.
