Green Salad With Feta

  1. Blanch green beans in boiling salted water for 2 mins, or until bright green. Shock in ice water then transfer to a serving bowl.
  2. Blanch sugar snap peas in boiling salted water for 1 min. Shock in ice water then add to green beans.
  3. To make the dressing, whisk together lemon juice and a pinch of salt. Gradually whisk in olive oil until emulsified. Add 1/2 of the vinaigrette to blanched vegetables along with herbs and green onions. Toss to combine. Season.
  4. Place lettuce in a serving bowl. Arrange vegetables over top. Sprinkle with feta and drizzle with remaining dressing. Garnish with extra dill.
