Green Salad With Feta
- 9 oz green beans, trimmed
- 9 oz sugar snap peas, trimmed
- 4.5 oz peas, fresh or frozen
- 1/4 cup lemon juice
- 1/3 cup extra-virgin olive oil
- 1/4 cup fresh dill, chopped, plus extra, for garnish
- 1/4 cup fresh flat-leaf parsley leaves, chopped
- 8 None green onions, sliced diagonally
- 2 heads romaine, large leaves cut into thirds
- 9 oz feta cheese, crumbled
- Blanch green beans in boiling salted water for 2 mins, or until bright green. Shock in ice water then transfer to a serving bowl.
- Blanch sugar snap peas in boiling salted water for 1 min. Shock in ice water then add to green beans.
- To make the dressing, whisk together lemon juice and a pinch of salt. Gradually whisk in olive oil until emulsified. Add 1/2 of the vinaigrette to blanched vegetables along with herbs and green onions. Toss to combine. Season.
- Place lettuce in a serving bowl. Arrange vegetables over top. Sprinkle with feta and drizzle with remaining dressing. Garnish with extra dill.
