Chocolate Pancakes With Marmalade And Crème Fraîche

  1. Beat eggs and sugar in a medium bowl with an electric mixer for 5 mins or until thick. Gently stir in milk, chocolate and butter. Sift flour, salt and cocoa powder into a large bowl. Gradually whisk in egg mixture until batter is smooth.
  2. Heat a large heavy-bottomed skillet on medium-low heat. Spray lightly with no stick cooking spray. For each pancake, pour 1/4 cup batter into pan. Cook pancake until bubbles appear on surface. Turn and cook for 2 mins or until cooked through. Remove from pan; cover to keep warm. Repeat with remaining batter, spraying with cooking spray as needed.
  3. Serve pancakes topped with creme fraiche and marmalade.
