Coconut Scones
- 1 cup flaked coconut
- 1 cup canned coconut cream, warmed
- 3 1/2 cups self-rising flour
- 2 tbsp powdered sugar
- 1/4 tsp salt
- 1/2 cup milk, plus additional, for brushing
- Combine coconut and coconut cream in a small bowl. Let stand 20 mins or until mixture has thickened slightly.
- Preheat the oven to 450u0b0F. Combine flour, powdered sugar and salt in a large bowl. Add coconut mixture and milk. Stir with a spatula to a soft, sticky dough.
- Turn out dough onto a lightly floured surface. Knead briefly until smooth. Pat or roll out to 3/4-inch thickness. Using a 2-inch cutter dipped into flour, cut rounds from dough. Place scones, side by side, on prepared pan. Re-rolls scraps as needed. Brush tops with additional milk to glaze.
- Bake for 12-15 mins or until golden and well risen. Serve scones with jam and cream, or with lime butter.
