Microwave Tortellini Casserole
- 1 1/2 lb. sweet Italian sausage
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 3 medium tomatoes
- 1 (9 oz.) pkg. refrigerated or 1/2 (16 oz.) pkg. frozen cheese (optional) tortellini
- 2 tsp. chicken bouillon
- 1 medium zucchini
- 1/4 c. fresh basil
- 1/4 tsp. pepper
- Remove sausage from casing.
- In 2 1/2-quart casserole, cook sausage, onion and garlic, covered, on High, 2 to 4 minutes, until done.
- Drain.
- Set aside.
- Coarsely chop 2 tomatoes, tortellini, bouillon and 1/4 cup water.
- Cook, covered, on High, 10 to 14 minutes until tortellini are almost tender.
- Stir occasionally. Cut zucchini into 1/2-inch pieces.
- Add to casserole.
- Cook 5 minutes.
- Cut up remaining tomato.
- Stir in tomato and basil. Cover and let stand 2 minutes.
- Serves 4.
