Club Sandwich
- 2 None cooked chicken breast fillets, finely chopped
- 1/4 cup mayonnaise
- 1/3 cup finely chopped macadamia nuts
- 1 stalk celery, finely chopped
- 1 tbsp vegetable or olive oil
- 4 slices bacon, cut into thirds
- 4 None large eggs
- 8 slices whole wheat bread, toasted
- 4 slices white bread, toasted
- 4 leaves iceberg lettuce, shredded
- 2 None medium tomatoes, thinly sliced
- Combine chicken, mayonnaise, macadamia nuts and celery. Set aside.
- Heat oil in a large frying pan over medium-high heat. Cook bacon for 5 mins, or until golden and crispy. Drain on paper towels.
- Crack the eggs into the pan. Cook for 2 mins. Flip over and cook for 1 min, or until yolk is almost set.
- Spread chicken mixture over 4 slices of whole wheat bread. Top with 4 slices of white bread. Top with lettuce, tomatoes, bacon and egg. Sandwich with remaining whole wheat bread slices then cut each sandwich into quarters. Secure with toothpicks. Serve.
