Club Sandwich

  1. Combine chicken, mayonnaise, macadamia nuts and celery. Set aside.
  2. Heat oil in a large frying pan over medium-high heat. Cook bacon for 5 mins, or until golden and crispy. Drain on paper towels.
  3. Crack the eggs into the pan. Cook for 2 mins. Flip over and cook for 1 min, or until yolk is almost set.
  4. Spread chicken mixture over 4 slices of whole wheat bread. Top with 4 slices of white bread. Top with lettuce, tomatoes, bacon and egg. Sandwich with remaining whole wheat bread slices then cut each sandwich into quarters. Secure with toothpicks. Serve.
