Cherry Tiramisu Cups
- 1 (13.5 oz) can cherries in syrup
- 1/2 cup cherry liqueur or brandy
- 5 None egg yolks
- 1/2 cup granulated sugar
- 1 None vanilla bean, seeds scraped out
- 1 lb mascarpone
- 16 None ladyfinger cookies
- 1/2 cup black coffee, chilled
- In a saucepan, combine cherries with syrup and liqueur over low heat. Simmer, stirring, for 4-5 mins, until syrup reduces slightly. Reserve 12 cherries to decorate.
- Meanwhile, combine egg yolks, sugar and vanilla bean seeds. Whisk until thick and pale. Beat in mascarpone.
- Dip ladyfingers into coffee then use to line the base of 4 serving glasses. Spoon 1/3 of the cherries and syrup over top then add a layer of mascarpone mixture. Repeat with remaining cherries and syrup and mascarpone mixture. Cover and chill for at least 4 hours.
- Serve tiramisu topped with reserved cherries.
