Beef And Bacon Casserole
- 2 tbsp vegetable or olive oil
- 10.5 oz beef sirloin steak, trimmed, cut into 3/4 inch pieces
- 2 slices bacon, chopped
- 1 None Spanish onion, finely chopped
- 2 cloves garlic, finely chopped
- 1 (13.5 oz) can whole tomatoes
- 2 None carrots, peeled, sliced
- 1/2 cup red wine
- 5 oz green beans, halved
- None None mashed potatoes, to serve
- Heat oil in a large heavy-bottomed saucepan over high heat. Cook beef, in batches, for 2 mins, or until browned. Transfer to a heatproof bowl.
- Reduce heat to medium. Add bacon, onion and garlic to pan and cook, stirring, for 3 mins, or until soft. Return beef and any juices to pan.
- Stir in wine, tomatoes, herbs, carrots and 2 tbsp water. Bring to a simmer. Cover and simmer, stirring occasionally, for 10 mins, or until sauce reduces and meat is tender. Stir in beans. Cover and simmer for 3 mins, or until beans are just tender. Serve casserole with mashed potatoes.
