Beef And Bacon Casserole

  1. Heat oil in a large heavy-bottomed saucepan over high heat. Cook beef, in batches, for 2 mins, or until browned. Transfer to a heatproof bowl.
  2. Reduce heat to medium. Add bacon, onion and garlic to pan and cook, stirring, for 3 mins, or until soft. Return beef and any juices to pan.
  3. Stir in wine, tomatoes, herbs, carrots and 2 tbsp water. Bring to a simmer. Cover and simmer, stirring occasionally, for 10 mins, or until sauce reduces and meat is tender. Stir in beans. Cover and simmer for 3 mins, or until beans are just tender. Serve casserole with mashed potatoes.
