Inside Out Cheeseburgers With Beet Compote

- 2 tbsp olive oil
- 2 None large, raw beets, peeled, grated
- 1 clove garlic, minced
- 1 tbsp brown sugar
- 2 tsp white vinegar
- None None FOR THE BURGERS
- 1 1/2 lb ground beef
- 1 None large egg
- 4 slices Swiss or Colby cheese
- 1 None small onion, cut into 1/3 inch-thick slices
- 4 None burger buns
- 12 leaves lettuce
- None None oven fries, to serve
- To make the beet compote, heat olive oil in a saucepan over medium heat. Add beets, garlic, sugar, vinegar, a pinch of salt and 1/3 cup water. Cover and cook for 12 mins, or until softened, stirring regularly. Remove from heat and season. Let cool slightly.
- Meanwhile, to make the burgers, combine ground beef and egg. Season and shape into 8 patties. Fold cheese slices into quarters then place in the center of 4 patties. Top with remaining patties and press edges together to seal.
- Heat a grill pan over high heat. Lightly coat burgers and onion slices with olive oil. Cook for 4-5 mins per side, until burgers are cooked through, cheese is melted and onion is just tender.
- To assemble, fill burger buns with lettuce, burgers, onion slices and beet compote. Serve with oven fries.
