Orange Blossom Semolina Cake With Spiced Honey Yogurt

  1. Preheat oven to 350u0b0F. Grease a deep 10 inch round cake pan. Line base and sides with parchment paper.
  2. Cream butter and 1/2 cup sugar until pale. Beat in orange zest and orange blossom water. Beat in eggs, 1 at a time. Fold in semolina, ground almonds and baking powder. Transfer to prepared pan and sprinkle with sliced almonds and remaining sugar. Bake for 35 mins, until a skewer inserted in the center comes out clean. Turn out onto a wire rack.
  3. Meanwhile, to make the orange syrup, combine orange juice and sugar in a small saucepan. Stir over low heat until sugar dissolves. Bring to a boil, reduce heat and simmer, uncovered, for 3 mins, or until slightly syrupy. Remove from heat.
  4. Pierce hot cake all over with a skewer. Pour 1/2 of the hot syrup over cake.
  5. Combine yogurt, honey and cardamom in a bowl. Serve warm cake with spiced honey yogurt and remaining orange syrup.
