Turkey Patties With Spinach Rice
- 1 lb ground turkey
- 1 None red onion, finely chopped
- 1/4 cup cranberry sauce
- 2 tbsp chopped parsley
- 1 tbsp oil
- None None FOR THE SPINACH RICE
- 3 slices bacon, finely chopped
- 4 None green onions, thinly sliced
- 2 cloves garlic, finely chopped
- 1/2 None lemon, peel finely grated and lemon juiced
- 3 cups cooked rice
- 2 oz baby spinach leaves
- For the turkey patties, combine ground turkey, onion, cranberry sauce and parsley in a large bowl. Season to taste; mix well. Shape into 8 patties.
- Heat oil in a large skillet on high heat. Cook patties for 3-4 mins each side until cooked through. Drain on paper towels and keep warm.
- For the spinach rice, cook bacon in a large skillet on medium heat until crisp. Stir in onions, garlic and lemon peel and juice. Cook 2-3 mins until tender. Add rice. Cook, stirring, for 3-5 mins. Remove from heat. Stir in spinach leaves and season to taste. Serve with patties.
