Turkey Patties With Spinach Rice

  1. For the turkey patties, combine ground turkey, onion, cranberry sauce and parsley in a large bowl. Season to taste; mix well. Shape into 8 patties.
  2. Heat oil in a large skillet on high heat. Cook patties for 3-4 mins each side until cooked through. Drain on paper towels and keep warm.
  3. For the spinach rice, cook bacon in a large skillet on medium heat until crisp. Stir in onions, garlic and lemon peel and juice. Cook 2-3 mins until tender. Add rice. Cook, stirring, for 3-5 mins. Remove from heat. Stir in spinach leaves and season to taste. Serve with patties.
