Vegetable Noodle Stir-Fry
- 2 pkg (3 oz each) ramen noodles
- 1 tbsp vegetable oil
- 1 medium onion, thinly sliced
- 1 medium carrot, peeled and thinly sliced
- 1 small green pepper, seeded and chopped
- 1 clove garlic, crushed
- 1 bunch baby bok choy, leaves separated
- 3 oz button mushrooms, sliced
- 2 tbsp kecap manis (thick sweet soy sauce)
- 2 tbsp soy sauce, plus additonal, to serve
- 1/4 cup crushed peanuts (optional)
- None None Shredded green onion, sliced red chili pepper, to serve
- Cook noodles according to package directions, omitting flavoring packet. Drain well.
- Heat oil in a wok or large skillet on high heat. Stir-fry onion, carrot, pepper and garlic 3-4 mins, until just tender.
- Add bok choy and mushrooms to pan. Stir-fry 1-2 mins, until bok choy begins to wilt.
- Toss noodles into pan with sauces. Stir-fry 1 min, until heated through.
- Serve topped with peanuts and green onion. Accompany with additional soy sauce and chili pepper.
