Lamb Chops With Tomato Sauce

  1. To make the tomato sauce, pour the vinegar into a large pot with the tomatoes, apricots, chili, sugar and oregano and bring to a boil. Reduce the heat and simmer for about 45 mins. Season, adding a little more vinegar and sugar if necessary, then remove from the heat and allow to cool.
  2. To prepare the lamb, heat 1 tbsp oil in 2 frying pans. Season the chops, then sear for 6-8 mins, turning. Transfer to plates and drizzle with tomato sauce and garnish with oregano.
  3. Reserve the remaining sauce for another use.
