Hawaiian Chicken
- 1 chicken, cut up and skinned
- 1/2 c. flour
- pepper
- 1 tsp. salt
- 1/4 c. sugar
- 1 Tbsp. cornstarch
- 1 large can pineapple chunks, reserve juice and add water to make 3/4 c.
- 2 Tbsp. vinegar
- 2 tsp. soy sauce
- 1/4 tsp. ground ginger
- 1 tsp. chicken bouillon
- 1 bell pepper, cut into 1-inch pieces
- onions
- slivered almonds (optional)
- 2 tomatoes, cut into 1-inch pieces
- Coat chicken with flour, salt and pepper.
- Brown in oil on all sides.
- In saucepan, combine sugar, cornstarch, juice, vinegar, soy sauce, ginger and bouillon.
- Bring to boil, stirring constantly.
- Pour over chicken.
- Add pineapple and other vegetables.
- Cover and cook over low heat for 20 to 25 minutes until tender.
