Hot And Sour Shrimp Soup

  1. Place stock, lemongrass, lime leaves and ginger in a large saucepan on high heat. Bring to a boil.
  2. Add shrimp, mushrooms and onions. Reduce heat to low; simmer for 2-3 mins or until shrimp are pink and tender. Stir in chili peppers, lime juice, soy sauce, fish sauce, cilantro and bean sprouts.
  3. Ladle into soup bowls. Garnish with fried cellophane noodles, if desired.
