Chicken Skewers With Curried Cauliflower
- 3 None chicken filets, cut into long strips
- 7 oz brown rice
- 4 tbsp olive oil
- 1 None small cauliflower, cut into florets and sliced
- 1 None red onion, peeled and chopped
- 1 None red chili pepper, deseeded and chopped
- 1 tbsp sesame seeds
- 2 None scallions, cut into diagonal slices
- 1 tsp curry powder
- 1 pinch sugar
- 4 tbsp sweet chili sauce
- 8 slices lime
- 1-2 stalks coriander to garnish
- Thread the chicken strips onto wooden skewers. Next, cook the rice in boiling salted water according to package instructions.
- Heat 2 tablespoons of the olive oil in a non-stick pan, and cook the cauliflower carefully over a medium heat, turning, for about 8 mins. Add the onion and the chili and cook for another 2 mins. Next, sprinkle with the sesame seeds.
- In another pan, heat the rest of the olive oil. Drop the chicken skewers into the hot oil and cook them in batches for about 4-5 mins each, turning, until they are golden brown on both sides, then season. Remove the chicken from the pan, and keep warm. Meanwhile drain the rice and stir in the scallions. Just before serving, sprinkle the cauliflower with the the curry powder and season, adding a pinch of sugar. Serve the chicken with the chili sauce drizzled over and the cauliflower and the rice on the side. Garnish with the lime slices and coriander.
