Salmon Fillets With Wasabi And Cilantro Butter

  1. Boil, steam or microwave potatoes until tender. Drain.
  2. Meanwhile, heat 2 1/2 tbsp butter and 1 tbsp oil in a large frying pan over high heat until butter begins to foam. Cook salmon, skin-side down, uncovered, for about 3 mins, or until skin is crisp. Reduce heat, cover and cook for 2-3 mins, or until salmon is cooked to your liking. Remove from pan and cover to keep warm.
  3. Heat remaining oil in a medium frying pan. Cook potatoes, shaking the pan occasionally, for about 5 mins, or until browned all over. Add coriander seeds and cook until fragrant.
  4. For the wasabi and cilantro butter, beat remaining butter, wasabi paste and garlic in a small bowl until combined. Stir in cilantro. Set aside.
  5. Serve salmon on potatoes with wasabi and cilantro butter and lime wedges.
