Berry Ice Cream Cake
- 4 oz white chocolate, melted
- 4 tbsp (1/2 stick) butter, melted
- 1 None egg
- 3/4 cup flour
- 2 tbsp self-rising flour
- 3/4 cup sugar
- 1/3 cup white chocolate chips
- 1/3 cup macadamia nuts, chopped
- 2 quarts vanilla ice cream, softened
- 2 cans (15 oz each) mixed berries in light syrup, drained, reserving syrup
- Preheat the oven to 350u0b0F. Grease and line bottom and sides of a 9 inch springform pan with parchment paper, extending paper 1 inch above rim of pan.
- Mix melted chocolate, butter, egg, flours, 1/2 cup of the sugar, chocolate chips and macadamias in a large bowl. Press into bottom of prepared pan.
- Bake 25 mins, or until lightly browned. Cool in pan in wire rack.
- Mix ice cream and berries. Spoon over crust, smoothing top. Cover and freeze 2 hours.
- Heat reserved syrup in a small saucepan. Add remaining 1/4 cup sugar; cook and stir until sugar dissolves. Boil 2 mins, or until reduced by half; cool. Slice cake. Serve drizzled with syrup.
