Our Favorite Oatmeal Bread
- 1 c. quick oats
- 1/2 c. whole wheat flour
- 1/2 c. brown sugar
- 1 Tbsp. salt
- 2 Tbsp. margarine
- 2 c. boiling water
- 1 pack (1 Tbsp.) dry yeast
- 1/2 c. warm water
- 5 c. white flour
- Combine oats, wheat flour, sugar, salt and margarine in a large bowl.
- Pour boiling water over this.
- In a separate bowl dissolve yeast in 1/2 cup warm water.
- When batter is cooled to lukewarm, add yeast.
- Stir in 5 cups flour and knead 5 to 10 minutes.
- Place in a greased bowl, cover and let rise until doubled in size.
- Punch down and let rise again.
- Shape into 2 loaves and place in greased 9 x 5 x 3-inch pans.
- Bake at 350u0b0 for 30 to 40 minutes.
- Cool on a rack, brushing loaves with margarine for a soft crust.
