Broccolini, Brown Rice And Macadamia Stir-Fry
- 2/3 cup brown rice
- 12 oz broccolini, trimmed
- 2 tsp vegetable oil
- 3 cloves garlic, crushed
- 6 None green onions, thinly sliced
- 2 None fresh long red chili peppers, thinly sliced
- 1 None red bell pepper, thinly sliced
- 2 tsp sesame oil
- 2 tbsp light soy sauce
- 1/2 cup macadamias, coarsely chopped
- Cook rice according to package directions. Cool.
- Cut broccolini stems in half lengthwise, then in half crosswise
- Heat vegetable oil in wok on high heat. Stir-fry garlic, onion, chili pepper and pepper 1 min. Add sesame oil, broccolini and rice; stir-fry 1 min. Add soy sauce and 2 tbsp water; stir-fry about 2 mins or until broccolini is tender. Season to taste. Serve sprinkled with nuts.
