Spicy Oat Patties

  1. Drain tofu on paper towel. Place oats in a food processor and process until a coarse meal forms.
  2. Heat 1 tablespoon of oil in a skillet on medium. Saute onion and garlic for 3 minutes, until soft. Add spice mix and cook for 1 minute, until fragrant. Combine onion mixture, tofu, and oats in a bowl. Season to taste. Shape 2 tablespoons of mixture into a small patty. Repeat with remaining mixture and set aside.
  3. Combine cucumber, tomatoes and mint in a bowl. Season to taste. Combine yogurt and lemon juice in another bowl. Season to taste.
  4. Heat remaining oil in a large skillet on medium. Cook patties for 4 minutes each side, until golden and crisp.
  5. Place patties in lettuce cups and top with cucumber salad. Serve drizzled with yogurt.
