Spicy Oat Patties
- 10 1/2 oz silken firm tofu
- 1 3/4 cups rolled oats
- 2 tbsp olive oil
- 1 None onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp ras el hanout or garam masala
- 1 None mini cucumber, diced
- 3 1/2 oz cherry tomatoes, halved
- 2 tbsp finely chopped mint
- 3/4 cup Greek-style plain yogurt
- 2 tsp lemon juice
- 4 None large iceberg lettuce leaves, trimmed
- Drain tofu on paper towel. Place oats in a food processor and process until a coarse meal forms.
- Heat 1 tablespoon of oil in a skillet on medium. Saute onion and garlic for 3 minutes, until soft. Add spice mix and cook for 1 minute, until fragrant. Combine onion mixture, tofu, and oats in a bowl. Season to taste. Shape 2 tablespoons of mixture into a small patty. Repeat with remaining mixture and set aside.
- Combine cucumber, tomatoes and mint in a bowl. Season to taste. Combine yogurt and lemon juice in another bowl. Season to taste.
- Heat remaining oil in a large skillet on medium. Cook patties for 4 minutes each side, until golden and crisp.
- Place patties in lettuce cups and top with cucumber salad. Serve drizzled with yogurt.
