Asian Beef And Rice Noodle Soup
- 2 cups beef stock
- 2 inches fresh ginger, grated
- 2 cloves garlic, thinly sliced
- 1 tbsp sambal oelek
- 2 tbsp fish sauce
- 1 tbsp brown sugar
- 16 oz fresh rice noodles
- 1 lb sirloin steak, thinly sliced
- 6 None spring onions, thinly sliced
- 3 oz bean sprouts, to serve
- 3 tbsp fresh mint leaves, to serve
- None None lemon wedges, to serve
- Bring 6 cups water, stock, ginger and garlic to a boil. Add sambal oelek, fish sauce and sugar. Simmer, uncovered, for 1 min.
- Meanwhile, prepare noodles according to package instructions. Divide between 4 large serving bowls.
- Add steak to simmering broth and return to a boil. Pour broth and steak over noodles. Top with spring onions. Serve with bean sprouts, mint and lemon wedges on the side.
