Bubble And Squeak English Breakfast
- 1 1/2 lbs savoy cabbage, finely shredded
- 1 3/4 lbs prepared mashed potatoes
- 1.5 oz cheddar, grated
- 4 None scallions, trimmed, finely chopped
- 2 tbsp butter
- 2 tbsp olive oil
- 6 None eggs
- None None Baby spinach leaves, to serve
- None None Cherry tomatoes, to serve
- Place cabbage in a colander in the sink and pour boiling water over. Rinse under cold water, then squeeze out excess liquid.
- In a large bowl, combine cabbage, potato, cheese and spring onions, mixing well. Season to taste. Set aside.
- Heat butter and 1 tbsp oil together in a broiler-safe frying pan. Add potato mixture, spreading evenly over the base. Reduce heat to low and cook for 15-20 mins, until base is crisp.
- Meanwhile, heat remaining tbsp oil in a separate frying pan and fry the six eggs in batches.
- Place under a preheated broiler and cook for 2-3 mins, until the top is golden. Rest in pan for 5 mins. Invert onto a cutting board and slice into 6 wedges. Serve each slice with baby spinach, cherry tomatoes and a fried egg.
