Bubble And Squeak English Breakfast

  1. Place cabbage in a colander in the sink and pour boiling water over. Rinse under cold water, then squeeze out excess liquid.
  2. In a large bowl, combine cabbage, potato, cheese and spring onions, mixing well. Season to taste. Set aside.
  3. Heat butter and 1 tbsp oil together in a broiler-safe frying pan. Add potato mixture, spreading evenly over the base. Reduce heat to low and cook for 15-20 mins, until base is crisp.
  4. Meanwhile, heat remaining tbsp oil in a separate frying pan and fry the six eggs in batches.
  5. Place under a preheated broiler and cook for 2-3 mins, until the top is golden. Rest in pan for 5 mins. Invert onto a cutting board and slice into 6 wedges. Serve each slice with baby spinach, cherry tomatoes and a fried egg.
