Shoo-Fly Pie
- 1/2 c. molasses
- 1 egg
- 1 1/2 tsp. baking soda
- 3/4 c. boiling water
- 3/4 c. all-purpose flour
- 1/2 c. packed brown sugar
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 1/4 tsp. ground cloves
- 2 Tbsp. butter
- 1 pie cust (9 or 10-inch)
- In a bowl, mix molasses, egg, soda and water.
- In a second bowl, combine flour, brown sugar and spices.
- Work with your fingers until even crumbs form.
- Sprinkle 1/3 of the flour mixture into the pie crust.
- Pour on 1/2 of the molasses mixture.
- Repeat with 1/3 of flour mixture and remaining molasses mixture.
- Top with remaining flour mixture.
- Bake at 450u0b0 for 10 minutes.
- Reduce heat to 350u0b0.
- Bake 20 minutes more or until filling is firm when shaken.
- Cool.
