Easy Fish Burgers

  1. For the sauce, combine yogurt, onions, gherkin and lemon peel and juice in a small bowl. Season to taste.
  2. Combine flour and cayenne pepper on a plate. Dust fish pieces in mixture, shaking off excess.
  3. Heat oil in a large skillet on medium heat. Cook fish for 2-3 mins, until golden. Turn and cook for 1-2 mins, until fish flakes easily when tested with a fork. Drain on paper towel. Keep warm.
  4. Spread bread rolls with a little butter. Place 2 lettuce leaves on bottom of each roll. Top each with a spoonful of sauce and a piece of fish. Serve immediately with lemon wedges.
