Easy Fish Burgers
- 3/4 cup Greek yogurt
- 2 None green onions, finely chopped
- 1 None gherkin, finely chopped
- 1 None lemon, peel finely grated and 2 tsp juice
- 1/3 cup flour, seasoned with salt and pepper
- 1/4 tsp cayenne pepper
- 4 None firm white fish fillets (3-4 oz each)
- 1 tbsp oil
- 4 None soft white rolls, halved and lightly toasted
- None None Butter, for spreading
- None None Lettuce leaves, lemon wedges, to serve
- For the sauce, combine yogurt, onions, gherkin and lemon peel and juice in a small bowl. Season to taste.
- Combine flour and cayenne pepper on a plate. Dust fish pieces in mixture, shaking off excess.
- Heat oil in a large skillet on medium heat. Cook fish for 2-3 mins, until golden. Turn and cook for 1-2 mins, until fish flakes easily when tested with a fork. Drain on paper towel. Keep warm.
- Spread bread rolls with a little butter. Place 2 lettuce leaves on bottom of each roll. Top each with a spoonful of sauce and a piece of fish. Serve immediately with lemon wedges.
