Spiced Fish With Lemon Pistachio Couscous
- 7 oz couscous
- 2 tsp lemon zest
- 1/4 cup lemon juice
- 2 tbsp olive oil
- 1 None small red onion, finely chopped
- 1 clove garlic, minced
- 2/3 cup pistachios, toasted, roughly chopped
- 1/4 cup fresh mint leaves
- 1 tbsp flour
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1 tsp sweet paprika
- 8 None sea bream fillets
- None None lemon wedges and steamed vegetables, to serve
- Combine couscous, lemon zest, lemon juice and 3/4 cup boiling water in a medium heatproof bowl. Cover and let stand for 3-5 mins, or until liquid has absorbed, fluffing with a fork occasionally.
- Heat 1 tbsp oil in a small saucepan over medium heat. Sweat onion and garlic until onion has softened. Stir into couscous along with pistachios and mint. Set aside.
- Combine flour and spices in a medium bowl. Coat fish in flour, shaking off excess. Heat remaining oil in a large nonstick frying pan over medium-high heat. Cook fish until browned on both sides and just cooked through. Serve immediately with couscous, lemon wedges and steamed vegetables.
