Spiced Fish With Lemon Pistachio Couscous

  1. Combine couscous, lemon zest, lemon juice and 3/4 cup boiling water in a medium heatproof bowl. Cover and let stand for 3-5 mins, or until liquid has absorbed, fluffing with a fork occasionally.
  2. Heat 1 tbsp oil in a small saucepan over medium heat. Sweat onion and garlic until onion has softened. Stir into couscous along with pistachios and mint. Set aside.
  3. Combine flour and spices in a medium bowl. Coat fish in flour, shaking off excess. Heat remaining oil in a large nonstick frying pan over medium-high heat. Cook fish until browned on both sides and just cooked through. Serve immediately with couscous, lemon wedges and steamed vegetables.
