Cream Of Potato Soup(Especially Irresistible On A Cold Day.)
- 4 large branches celery and leaves
- 2 medium onions
- 1 1/2 c. water
- 2 chicken bouillon cubes
- 1 1/2 c. mashed potatoes
- 1 Tbsp. butter
- 2 c. milk
- dash of paprika
- chopped chives or parsley
- 4 medium potatoes, peeled
- 1 medium onion, sliced
- 4 c. boiling water
- 1/3 c. diced summer sausage
- 1/2 tsp. thyme leaves
- 1/2 tsp. marjoram leaves
- 1 1/2 tsp. salt
- pepper
- 2 Tbsp. butter or regular margarine
- 1/2 c. grated sharp cheese
- 1 Tbsp. grated Parmesan cheese (optional)
- Cut potatoes in halves.
- Cook with onion in 2 cups boiling water until tender.
- Do not drain.
- Mash potatoes.
- Add sausage, thyme, marjoram, salt, pepper, butter, sharp cheese and remaining boiling water.
- Simmer 10 minutes.
- Add grated cheese just before serving.
- Makes 6 servings.
