Chocolate Peanut Butter Bars
- 1 cup smooth peanut butter
- 8 tbsp (1 stick) butter, chopped
- 2 1/2 cups powdered sugar
- 1 cup chopped peanuts
- 4 oz white chocolate, chopped
- 4 oz semi-sweet chocolate, chopped
- Place the peanut butter and butter in a medium saucepan on low heat. Cook and stir for 3 mins or until melted and smooth. Transfer to a heatproof bowl. Sift the powdered sugar over the peanut butter mixture and stir to combine. Stir in 3/4 cup of the peanuts. Cover with plastic wrap. Refrigerate for 15 mins or until firm.
- Line 2 baking pans with parchment paper. Shape level tablespoons of the mixture into twenty four 1 x 3/4-inch rectangles to make bars. Place on the prepared pans. Refrigerate for 15 mins or until firm.
- Melt the white chocolate in a heatproof bowl over a saucepan of simmering water (don't let the bottom of the bowl touch the water). Dip 12 bars halfway into the melted white chocolate. Return to the pan. Melt the semi-sweet chocolate. Dip the remaining 12 bars halfway into the melted semi-sweet chocolate. Return to the pan. Sprinkle the chocolate-dipped end of the bars with remaining 1/4 cup chopped peanuts. Refrigerate for 30 mins or until set. Serve chilled.
