Whole Wheat Kiwi Muffins
- 1 cup self-rising flour, sifted
- 1 cup whole wheat self-rising flour, sifted
- 1/4 cup granuated sugar
- 1 tsp baking powder
- 3/4 cup milk
- 1 None egg, lightly beaten
- 5 1/2 tbsp butter, melted
- 5 None kiwis, peeled, 3 cut into 4 slices, 2 coarsely chopped
- None None apricot jam, warmed, to glaze
- Preheat oven to 400u0b0F. Line a 12-cup muffin pan with paper liners.
- Combine flour, sugar and baking powder. Combine milk, egg, butter and chopped kiwi then mix into dry ingredients until just combined. Distribute between paper liners. Top each with a slice of kiwi. Bake for 20 mins. Brush with warmed apricot jam. Return to oven and bake for another 5 mins, or until muffins spring back when touched. Let cool on a wire rack.
