Marbled Strawberry Chocolate Cupcakes
- 1 x 15 oz package butter cake mix
- 3 None large eggs
- 3 tbsp butter, melted
- 1 cup buttermilk
- 2 tbsp cocoa powder
- 4.5 oz strawberries, washed, hulled, finely chopped
- None None Extra strawberries, halved, to serve
- Preheat oven to 350u0b0F. Line a 12-hole muffin pan with paper liners.
- Combine cake mix with eggs, butter and buttermilk; reserve 1/2 cup of the mixture.
- Combine cocoa and 1 tbsp just-boiled water in a small bowl. Add to main mixture, then stir in chopped strawberries.
- Spoon mixture into prepared cupcake liners. Spoon reserved yellow mixture on top and swirl using a skewer, creating a marbled effect.
- Bake 25-30 minutes, until a skewer inserted in the center of a cake comes out clean. Serve cupcakes topped with halved strawberries.
