Cajun Chicken With Chunky Salsa
- 2 tbsp chopped oregano
- 2 cloves garlic, crushed
- 2 tsp paprika
- 2 tsp olive oil
- 1 tsp cracked black pepper
- 1 tsp red pepper flakes
- 4 None boneless skinless chicken breasts, trimmed
- None None Lime wedges, to serve
- None None FOR THE CHUNKY SALSA
- 2 large tomatoes, chopped
- 1 medium green pepper, seeded and chopped
- 1 small red onion, finely chopped
- 1/4 cup chopped cilantro
- 2 tbsp lime juice
- 2 tsp extra virgin olive oil
- None None Few drops Tabasco sauce
- Combine oregano, garlic, paprika, olive oil, black pepper and red pepper flakes in a large bowl. Add chicken; turn to coat. Set aside to marinate 15 mins.
- For the salsa, combine all ingredients in a large bowl. Set aside.
- Heat an oiled grill pan on high heat or preheat the grill to medium-high. Grill chicken 3-4 mins each side, or until cooked through. Let stand for 5 mins then thinly slice.
- Serve chicken with salsa, lime wedges and toasted flour tortillas, if desired.
