Soy Pork With Mushrooms And Spinach
- 4 None boneless pork chops (5 to 6 oz each)
- 1/4 cup reduced sodium soy sauce
- 2 tbsp oyster sauce
- 2 tbsp lemon or lime juice
- 2 tsp sesame oil
- 2 tbsp chopped fresh cilantro
- 1 tbsp grated fresh ginger
- 1 clove garlic, crushed
- 7 oz cremini mushrooms, sliced
- 7 oz button mushrooms, quartered
- 3 oz baby spinach leaves
- 1 None red chili pepper, finely chopped
- Place pork in a glass dish. Drizzle with 2 tbsp of the soy sauce; turn to coat. Cover with plastic wrap. Refrigerate for 15 mins to marinate.
- Mix remaining 2 tbsp soy sauce, oyster sauce, lemon juice, oil, 1 tbsp of the cilantro, ginger, garlic and 2 tbsp water in a small bowl.
- Heat a grill pan on high heat. Add pork; cook for 4 mins each side or until cooked through. Transfer to a plate. Cover with foil and let stand for 5 mins.
- Meanwhile, heat a large skillet on medium heat. Spray mushrooms with no stick cooking spray. Add mushrooms to skillet; cook and stir for 3 mins. Add sauce mixture; bring to a boil. Add spinach. Cover; cook for 1-2 mins, shaking pan occasionally, until spinach wilts. Remove from heat.
- Divide spinach mixture among serving plates. Top with pork; sprinkle with remaining cilantro and chili pepper.
