Mustard Steak With Sweet Potato Gratin

  1. Preheat oven to 350u0b0F. Lightly grease 4 recesses of a deep muffin pan. Line each recess with 2 strips of parchment paper, overlapping at the base.
  2. Spread mustard over both sides of steaks. Wrap prosciutto around each steak and secure with a toothpick. Chill until required.
  3. To make the sweet potato gratin, layer sweet potatoes in recesses of muffin pan. Combine cream and garlic. Season. Carefully pour cream over sweet potatoes. Sprinkle with cheese. Place on a baking tray and cover with foil. Bake for 25 mins. Remove foil and cook for another 15-20 mins, until golden and tender.
  4. When ready to serve, heat oil in a large frying pan over high heat. Cook steaks for 2-3 mins per side, until cooked to your liking. Serve with sweet potato gratin and steamed vegetables. Drizzle with balsamic glaze.
