Tangy Duck Salad
- 4 None shallots, thinly sliced
- 1/4 cup lime juice
- 1/4 cup grated palm sugar or brown sugar
- 2 tbsp fish sauce
- 1 tbsp peanut oil
- 1 small cucumber, diagonally sliced
- 1 cup mint leaves
- 1 cup cilantro leaves
- 1/2 cup Thai basil leaves
- 3 None kaffir lime leaves, finely sliced
- 1 None Chinese barbecued duck, sliced
- None None Sliced chili pepper, shredded green onion, lime wedges to serve
- Combine the shallots, lime juice, sugar, fish sauce and oil in a medium bowl. Set aside for 10 mins until the shallots become transparent.
- Combine the cucumber, herbs and kaffir lime leaves in a large bowl. Add the shallot mixture and toss well.
- Arrange the duck on a serving platter with the salad. Top with chili pepper and green onion. Accompany with lime wedges.
