Pan-Fried Salmon With Mashed Cauliflower And Asparagus
- 3 tbsp butter
- 1 None small cauliflower, cut into florets
- 4 None salmon or sea trout fillets (5 oz each), skin on
- 1/2 cup roasted chopped nuts, such as almonds, hazelnuts, pine nuts and walnuts
- None None steamed asparagus, to serve
- In a small saucepan or frying pan, melt butter on low heat and cook until light golden brown with a gentle nutty aroma. Set aside.
- Cook cauliflower in a saucepan of boiling salted water for 6 mins, covered, until tender and drain thoroughly.
- Puree cauliflower using a food processor or hand blender until smooth and creamy. Add half the browned butter and season well. Cover and set aside, keeping warm.
- Heat a non-stick frying pan on medium. Cook salmon, skin side down, for 4 mins then turn and cook for 1 min, or until opaque but still a little pink in center.
- Top cauliflower mash with salmon and drizzle over remaining butter. Scatter with nuts and serve with steamed asparagus.
