Cheesy Squash Scones
- 9 oz winter squash, coarsely chopped
- 4 tbsp butter
- 2 2/3 cups self-rising flour
- 1 tbsp sugar
- 1 oz Cheddar cheese, coarsely grated
- 1.5 oz Parmesan cheese, coarsely grated, 1/2 oz reserved for sprinkling
- 1/2 cup milk
- Preheat oven to 475u0b0F. Grease a deep 7 inch square cake pan. Boil, steam or microwave squash until just tender. Drain then mash. Let cool for 10 mins.
- Combine flour and sugar in a medium bowl. Cut in butter until mixture resembles breadcrumbs. Stir in cheese and mashed squash. Make a well in the center and add milk. Stir until just combined.
- Turn dough out onto a lightly floured surface and knead lightly until smooth. Roll into a 3/4 inch thick disc. Cut out 16 x 2 inch rounds from dough. Place scones, side by side, in prepared pan. Sprinkle with extra Parmesan. Bake for 20 mins.
