Chorizo And Potato Fritters

  1. Heat oil in medium frying pan and cook chorizo, onion and chili, stirring, until onion softens. Add zucchini. Cook, stirring, for 1 min. Cool for 10 mins.
  2. Combine chorizo mixture in large bowl with potato, sweet potato, eggs, flour and paprika.
  3. Heat oil in wok or large saucepan. Deep fry level tablespoons of potato mixture until fritters are browned lightly. Drain on paper towels.
  4. Make dipping sauce by combining sour cream and sweet chili sauce in a small bowl. Serve fritters with dipping sauce on the side.
