Tuna Steaks With Chili Quinoa
- 1 cup quinoa
- 1 cup vegetable or fish stock
- 2 tbsp peanut oil
- 1/2 cup loosely packed cilantro leaves
- 3 cloves garlic, chopped
- 1 tbsp chopped ginger
- 2 None kaffir lime leaves, shredded
- 2 tsp finely grated lime peel
- 2 tsp lime juice
- 4 None tuna steaks (5 oz each)
- 1 None long red chili pepper, thin sliced
- None None Lime wedges, cilantro leaves, to serve
- Wash and drain quinoa. Place in a medium saucepan with stock and 1 cup water. Bring to a boil on high heat. Reduce heat to low; simmer, covered, for 15 mins.
- Meanwhile, combine half the oil, cilantro, garlic, ginger, lime leaves, and lime peel and juice in a shallow dish. Add tuna; gently rub marinade into both sides of tuna. Cover. Refrigerate for 10 mins.
- Fluff quinoa with a fork. Stir in remaining oil and chili pepper. Cover and set aside.
- Heat a grill pan on high heat or preheat the grill to medium-high. Cook tuna 1-2 mins each side, until cooked to desired doneness. Serve with quinoa and lime wedges. Top with cilantro leaves.
