Tuna Steaks With Chili Quinoa

  1. Wash and drain quinoa. Place in a medium saucepan with stock and 1 cup water. Bring to a boil on high heat. Reduce heat to low; simmer, covered, for 15 mins.
  2. Meanwhile, combine half the oil, cilantro, garlic, ginger, lime leaves, and lime peel and juice in a shallow dish. Add tuna; gently rub marinade into both sides of tuna. Cover. Refrigerate for 10 mins.
  3. Fluff quinoa with a fork. Stir in remaining oil and chili pepper. Cover and set aside.
  4. Heat a grill pan on high heat or preheat the grill to medium-high. Cook tuna 1-2 mins each side, until cooked to desired doneness. Serve with quinoa and lime wedges. Top with cilantro leaves.
