Horseradish Beef Salad
- 1 lb beef sirloin steak
- 1 1/2 tbsp cider vinegar
- 1 tbsp horseradish sauce
- 1 head green leaf lettuce, trimmed, leaves separated
- 1 small cucumber, thinly sliced
- 2 medium tomatoes, cut into wedges
- 1 None avocado, thinly sliced
- 1 small red onion, thinly sliced
- Preheat a grill pan on high heat or preheat the grill to medium-high.
- Season both sides of beef with pepper. Spray with no.stick cooking spray. Cook for 4-5 mins each side for medium or until cooked to desire doneness.
- Transfer beef to a heatproof plate. Cover with foil; let stand for 5 mins. Slice.
- Meanwhile, whisk vinegar, 1 1/2 tbsp water and horseradish in a small bowl until combined.
- Divide lettuce, cucumber, tomato, avocado, onion and beef among serving bowls. Drizzle with dressing; serve at once.
