Mushroom Spread Toasties
- 1 1/3 lbs mixed mushrooms
- 2 tbsp olive oil
- 3 tbsp butter
- 3 cloves garlic, crushed
- 3 sprigs fresh thyme
- 1/4 cup finely grated Parmesan cheese
- 2 tbsp finely chopped fresh flat-leaf parsley
- 2 tsp Worcestershire sauce
- 8 oz brioche, cut into 1/3-inch thick slices and toasted
- 1/3 cup sour cream
- 2 tbsp finely chopped fresh chives
- Preheat the oven to 300u0b0F.
- Process mushrooms until finely chopped.
- Heat oil and butter in large skillet on medium-high heat. Cook garlic, thyme and mushrooms, stirring, until tender. Discard thyme stems. Stir in cheese, parsley and Worcestershire sauce.
- Cut out 1 1/2-inch rounds from brioche slices. Place on baking pan. Toast again in oven about 5 mins or until crisp.
- Place 1 tsp mushroom mixture on each toast. Top with sour cream and chives.
