Pork Hot Pot With Couscous
- 1 tbsp all purpose flour
- 1 tbsp smoked paprika
- 1 tsp cayenne pepper
- 2 tbsp oil
- 1 lb pork neck, cubed
- 1 None onion, chopped
- 2 None large potatoes, peeled, cubed
- 1 (14 oz) can diced tomatoes
- 1 cup chicken stock
- 1 None cinnamon stick
- 1 None bay leaf
- 1 (14 oz) can red kidney beans, drained, rinsed
- None None chopped flat parsley leaves, to serve
- 1 cup couscous
- 2/3 cup boiling water or vegetable stock
- Combine flour, paprika and cayenne. Heat half the oil in a saucepan on high.
- Toss pork in flour mixture. Cook pork in 2 batches, for 2-3 minutes, until browned.
- Heat remaining oil in same pan. Saute onion for 2-3 minutes. Add potato, tomatoes, stock, cinnamon and bay leaf. Stir pork through.
- Bring to a boil then reduce heat. Simmer for 45 minutes, until pork is tender. Stir in beans and cook for 4-5 minutes, until heated through. Season to taste.
- Meanwhile, combine couscous and water or vegetable stock. Cover and set aside for 5 minutes, until liquid is absorbed. Fluff with a fork.
- Serve hot pot on couscous, sprinkled with chopped parsley.
