Pork Hot Pot With Couscous

  1. Combine flour, paprika and cayenne. Heat half the oil in a saucepan on high.
  2. Toss pork in flour mixture. Cook pork in 2 batches, for 2-3 minutes, until browned.
  3. Heat remaining oil in same pan. Saute onion for 2-3 minutes. Add potato, tomatoes, stock, cinnamon and bay leaf. Stir pork through.
  4. Bring to a boil then reduce heat. Simmer for 45 minutes, until pork is tender. Stir in beans and cook for 4-5 minutes, until heated through. Season to taste.
  5. Meanwhile, combine couscous and water or vegetable stock. Cover and set aside for 5 minutes, until liquid is absorbed. Fluff with a fork.
  6. Serve hot pot on couscous, sprinkled with chopped parsley.
