Calamari With Lemon Mayonnaise
- 2/3 cup mayonnaise
- 2 tbsp lemon juice
- 2 cloves garlic, crushed
- 1 1/2 lbs cleaned baby calamari (squid) bodies
- 2/3 cup flour
- 1/2 cup rice flour
- None None Vegetable oil, to deep-fry
- None None Lemon wedges, to serve
- For the lemon mayonnaise, mix mayonnaise, lemon juice and garlic in a small bowl. Cover and refrigerate until ready to serve.
- Cut calamari bodies in half lengthwise. Open out flat. Score inner surface in a crisscross pattern, then cut in half crosswise.
- Place flours in a medium bowl. Season. Toss calamari, in batches, in flour to coat; shake off excess.
- Heat oil in a deep-fryer or large heavy-bottomed saucepan on medium heat (oil is ready when a cube of bread crisps quickly without absorbing oil). Deep-fry calamari, in batches, for 1-2 mins or until lightly golden. Using a slotted spoon, transfer to paper towels. Serve with mayonnaise and lemon wedges.
