Chicken And Sweet Potato Lasagna

  1. Preheat oven to 400u0b0F. Lightly grease a baking dish and 2 baking trays.
  2. Arrange sweet potato slices on trays. Season. Bake for 5-10 mins, or until tender.
  3. Meanwhile, heat oil in a large frying pan over high heat. Saute onion and garlic for 2-3 mins, or until tender. Add ground chicken and cook for 5 mins, or until browned, breaking up lumps with a spoon. Add tomato sauce and stock. Reduce heat and simmer for 3-5 mins.
  4. Line prepared dish with 1 lasagna sheet. Spread 1/3 of the chicken mixture over top. Add another sheet of lasagna, 1/2 of the chard, 1/2 of the cheese and 1/2 of the remaining chicken mixture. Top with another sheet of lasagna, sweet potatoes and remaining chicken mixture. Add the last sheet of lasagna, remaining chard and cheese. Bake for 25-30 mins, or until tender and golden.
  5. Serve with salad.
