Macaroni Cheese
- 10 oz elbow macaroni
- 4 slices bacon
- 5 tbsp butter
- 1/3 cup flour
- 4 cups milk
- 1 cup grated Cheddar cheese
- 1/3 cup grated Parmesan or pecorino cheese
- 1 1/2 tbsp wholegrain mustard
- 1/3 cup stale breadcrumbs
- Cook pasta in a large saucepan of boiling, salted water according to package directions. Drain and return to the pan.
- Meanwhile, cook the bacon in a skillet until crisp. Drain on paper towels, then crumble.
- Melt 3 tbsp butter in a medium saucepan on medium heat, Add the flour and cook, stirring, for 1 min. Gradually stir in the milk. Continue stirring until the sauce boils and thickens. Cool for 2 mins, then stir in the cheeses and mustard.
- Preheat the oven to 400u0b0F. Add the bacon and sauce to the pasta; mix well. Transfer to an oiled 2-quart baking dish. Sprinkle with breadcrumbs; dot with remaining 2 tbsp butter.
- Bake for 30 mins, or until bubbling and browned on top.
