Apple And Cranberry Cake
- 12 oz apples, peeled, cored, coarsely grated
- 1/2 cup butter
- 1/2 cup dark brown sugar
- 3 None eggs
- 1 1/4 cups self-rising flour, sifted
- 1/2 tsp ground cinnamon
- 1 tbsp ground pumpkin pie spice
- 2/3 cup dried cranberries
- 1 None red apple, cored, chopped, to decorate
- 1 tbsp honey
- Preheat oven to 350u0b0F. Grease and line the base of a 7 inch cake pan with parchment paper.
- Cook grated apples and 4 tbsp water over medium heat for 10-12 mins, stirring, until slightly pulpy. Drain any liquid then set aside to cool slightly.
- Meanwhile, cream butter and sugar until light and fluffy. Add eggs, 1 at a time, mixing well between additions. Sift in flour and spices then fold in until combined. Fold in apples and cranberries. Transfer to prepared pan and bake for 1 hour 5 mins, until a skewer inserted in the center comes out clean. Let cool in pan for 5 mins then turn out onto a wire rack to cool completely.
- Combine red apple and 3 tbsp cold water. Cook over high heat for 3-4 mins, stirring occasionally, until apples have softened slightly and water has evaporated. Add honey and cook for 2-3 min, stirring occasionally. Let cool slightly.
- Remove parchment paper from cake and place cake on a serving plate. Spoon honey apples over top. Serve sliced.
