Sausage Frittata
- 1/3 cup dried breadcrumbs
- 4 links breakfast sausages
- 1 large onion, thinly sliced
- 7 oz button mushrooms, quartered
- 4 oz baby spinach leaves
- 6 None eggs, at room temperature
- 1 tub (8 oz) spreadable cream cheese
- 5 oz cherry tomatoes, halved
- 1/2 cup grated Cheddar cheese
- None None Mixed salad, to serve
- Preheat the oven to 350u0b0F. Spray a 1 1/2-quart round baking dish with no stick cooking spray. Sprinkle surface with breadcrumbs. Place dish on a baking pan.
- Heat a large skillet on medium heat. Spray sausages with cooking spray. Add to pan; cook and turn for 3-4 mins or until seared. Transfer to a cutting board. Cool slightly. Slice thickly.
- Add onion to pan, cook and stir for 1 min. Add mushrooms; cook and stir for 2-3 mins or until vegetables are just tender. Add spinach; toss for 1-2 mins or until spinach wilts.
- Remove from heat; drain any liquid from pan. Spoon vegetables into prepared dish. Whisk eggs and cream cheese in a large bowl; season with salt. Pour egg mixture over vegetables in dish. Top with sausage and tomato. Sprinkle with Cheddar cheese.
- Bake for 25-30 mins or until just set. Let stand for 5 mins before serving.
