Turkish Lamb Pizzas

  1. In a bowl, combine 1 tbsp olive oil with cumin, coriander, garlic and lemon juice. Add lamb. Marinate in fridge for 1-2 hours.
  2. Heat remaining oil in a frying pan over medium heat. Cook lamb for 3-5 mins per side. Remove from pan and let cool slightly. Slice thinly then mix with pepper and olives.
  3. Using a 2 1/2 inch cutter, cut 12 rounds from each sheet of pie dough. Pinch together 2 sides of each pastry round to form a boat. Fill each pastry boat with lamb mixture. Bake for 8-10 mins, until golden brown and heated through. Serve topped with a little pesto.
