Smoked Salmon And Ricotta Filo Pies
- 10 oz ricotta cheese
- 1/2 cup sour cream
- 2 tbsp capers
- 8 None spring onions, chopped
- 12 sheets filo pastry
- None None melted butter, for brushing
- 12 slices smoked salmon, about 3 x 4 inches each
- Preheat oven to 425u0b0F. For the filling, combine the ricotta, sour cream, capers and spring onions in a bowl and season with pepper.
- Brush a sheet of filo with melted butter, fold lengthwise and brush with more butter. Place a slice of salmon at one end and spread 1 tbsp filling on half of it. Fold salmon to enclose filling. Fold in base and sides of filo. Brush with butter. Fold into a bundle and brush with more butter. Repeat with the remaining filo, salmon and filling. Arrange bundles on a baking sheet and bake 7-8 mins, until golden. Serve hot.
